WThis is a simplified interpretation of a cocktail found on our latest drinks list. It's a party-sized premix which is packed full of flavours of the Christmas time, which makes it ideal for hosting a holiday party. Reserve the remaining syrup for breakfast cocktails, puddings, or to mix more rounds of bikinis.

Yields 10 servings
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Put all the components into a pan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, remove from the burner and leave to reach room temperature entirely. Transfer into a sterilised bottle, cap it keeping it chilled, where it will keep for around four weeks.
To make Batch Mix: Pour all the spirits and syrup into one sizeable container, let it rest for one hour, then strain preferably using cheesecloth, to ensure it's fully clarified.
For serving: Pour 85ml of your premix into your mixing glass containing ice, and stir lightly for one minute to chill. Pour into a frosted cocktail glass or similar, top with a few cranberries adding the final touch using a brief mist of the essential oil over the top.
